Asian Chicken Lettuce Wraps

1 lb ground chicken 

1-8 oz can of water chestnuts, diced finely

1/2 cup minced carrots

2 tbsp of hoisin sauce

2 tbsp of soy sauce

1 tsp chili garlic sauce (I use Sambal Oelek Chili Garlic Sauce)

2 garlic cloves, minced 

1 tbsp toasted sesame oil

1/4 cup of scallions, sliced thinly

1 head of Iceberg Lettuce, core removed and cut in half (you can use romaine leaves if you prefer instead)

Cooking Directions:

  1. Add the toasted sesame oil to a large sautée pan (if you have a wok, I would recommend using it for this recipe). When the oil starts to lightly smoke, carefully add the ground chicken and cook for 5 minutes. Constantly stirring to evenly cook the meat. 
  2. Add the carrots, half of the scallions, and garlic cloves and let cook for another 2 minutes. 
  3. After the mixture has been cooking, add the hoisin sauce, soy sauce, chili garlic sauce and water chestnuts to the mix and let it cook for 3 more minutes until the ingredients are evenly mixed. 
  4. Transfer the chicken and vegetable mix to a bowl and top with the remaining scallions. 
  5. Serve with your lettuce cups and enjoy!
